Scanpan Fry Pan Buying Guide: Sizes & Types

A good fry pan is the piece most of us use every day, and Scanpan makes them in non-stick and stainless steel across many ranges and sizes. This guide helps you choose the right Scanpan fry pan by material, size and cooktop, using Scanpan's own product information. Browse every option in our Scanpan collection.

Step 1: Non-stick or stainless steel?

Choose non-stick if you want...

  • Easy food release for eggs, pancakes, fish and delicate foods.
  • Cooking with little or no oil. Scanpan says its non-stick pans are designed for fat-free frying.
  • Quick clean-up.

Scanpan's non-stick is made in Denmark and, according to Scanpan, is safe to use with metal utensils.

Choose stainless steel if you want...

  • A pan for browning and building pan sauces.
  • Cookware that can go in the dishwasher routinely. Scanpan notes that frequent dishwashing can dry out non-stick, while its stainless ranges can be machine washed.

Read more in our non-stick guide and stainless steel guide.

Step 2: Choose your size

  • 18–20cm: one or two eggs, a single serve or small sides.
  • 24–26cm: everyday cooking for one to two people.
  • 28cm: a family-size all-rounder.
  • 30–36cm: big batches, entertaining and larger families.

If you cook for different numbers, a two-pan set covering a small and a large size is a practical choice.

Step 3: Check your cooktop

Scanpan says almost all of its ranges work on induction, but the original Classic range does not. If you cook on induction, choose Classic Induction, TechnIQ or a stainless range instead. See our Scanpan induction guide.

How to cook in a Scanpan non-stick fry pan

Scanpan recommends preheating the empty pan for a few minutes on low to medium heat. For searing, brush the food with oil and dry-fry it. Otherwise, add your fat just before the food, then turn to medium heat. Don't move food until it has released from the pan. Never use aerosol cooking sprays, as Scanpan says they leave residue that can be hard or impossible to remove.
