Can Scanpan go in the oven?
Yes. Scanpan says its lids, pans and most handles are oven safe to 250°C. The exception it names is the detachable Urban handle. Some ranges list a lower limit, so always check the individual product:
- Classic Induction and TechnIQ: oven safe to 250°C
- STS: body oven safe to 250°C (fry pan)
- Coppernox: oven safe to 220°C (fry pan)
- Impact: 220°C / 250°C with or without lid (fry pan)
- Clad 5 and Axis: ovenproof to 200°C
Is Scanpan dishwasher safe?
Scanpan says all of its cookware is dishwasher safe except Black Iron, which must never go in the dishwasher. However:
- Non-stick: Scanpan recommends hand washing, because frequent dishwasher use dries out the non-stick surface.
- Stainless steel: Scanpan says ranges such as Impact and STS can go in the dishwasher routinely, though its product pages recommend hand washing to extend their life.
How do I clean Scanpan non-stick?
Scanpan recommends washing after every use in warm soapy water and drying thoroughly. Cast-aluminium pans (not those with stainless-clad exteriors) can be washed while still hot, which helps steam off any residue.
My non-stick pan has started sticking. What do I do?
Scanpan says this is usually caused by residue build-up. To remove it:
- Fill the pan with a solution of 1 tablespoon of baking soda to 2 cups of water.
- Bring it to the boil and boil for 5 minutes.
- Let it stand for 30 minutes, then clean the pan.
- Repeat if needed.
Scanpan also suggests Barkeepers Friend paste with a nylon brush. Dry the pan straight away afterwards to avoid water spots.
How do I clean Scanpan stainless steel?
Heat can cause stainless steel to discolour. Scanpan suggests a stainless steel cleaner, Barkeepers Friend, Bon Ami, or a paste of baking soda and water to restore the shine.
There's a white residue on the base of my pan. What is it?
Scanpan says this comes from a reaction with phosphates in dishwasher detergent. It's harmless and can be removed with warm soapy water. Hand washing, or using a phosphate-free detergent, prevents it.
Can I use metal utensils?
Yes. Scanpan says its non-stick is metal-utensil safe. You may see cosmetic scuffs over time, but Scanpan says they don't breach the surface or affect performance.
Which oils can I use?
Scanpan says any cooking oil is fine, but you should never use aerosol cooking sprays. They leave a residue that can be hard or impossible to remove, and Scanpan's warranty doesn't cover damage from it.
Do I need to season Scanpan non-stick?
Scanpan's FAQ doesn't include seasoning instructions for its non-stick. It does note that Black Iron cookware comes pre-seasoned and ready to use.
How should I cook with Scanpan non-stick?
Preheat the empty pan for a few minutes on low to medium heat. For searing, brush the food with oil and dry-fry. Otherwise, add your fat just before the food and cook on medium heat. Scanpan says its non-stick pans are designed for fat-free frying, so wait until food releases before moving it.
What does the warranty cover?
- Non-stick: a limited lifetime warranty against manufacturing defects.
- Stainless steel: a 10-year warranty against manufacturing defects.
- Not covered: residue build-up, damage from aerosol sprays, and accidental damage such as dropping.
